Cook's notes
- •Make the onion gravy up to 2 days ahead using butter and oil instead of sausage drippings. Refrigerate promptly, then reheat in the sausage pan after cooking the sausages, adding a splash of stock or water if needed.
- •Refrigerate leftovers in covered containers within 2 hours and use within 3 days. Reheat the sausages and gravy gently, and warm the mash separately with a splash of milk, until everything reaches 165°F (74°C).
- •Choose thick British-style pork sausages, such as Cumberland or Lincolnshire, for a traditional flavour. Use floury potatoes and a hand masher or potato ricer; a blender or food processor will make the mash gluey.
