Cook's notes
- •Make ahead: Marinate the chicken the night before, but coat it shortly before frying for the best crust. To keep early batches warm, place the draining rack and baking sheet in a 200°F (95°C / Gas ¼) oven while you finish frying.
- •Storage: Refrigerate leftovers in a shallow, covered container within 2 hours and use within 3–4 days. Reheat on a rack over a baking sheet at 375°F (190°C / Gas 5) for 20–25 minutes, until the center reaches 165°F (74°C).
- •Swap: If buttermilk is unavailable, combine 2 tbsp lemon juice or white vinegar with enough whole milk to make 2 cups (480 ml), then stand for 10 minutes before using. Nutrition estimates allow for discarded marinade and flour, and approximately 1½ tbsp absorbed frying oil per serving.
