Cook's notes

  • •Make ahead: Complete the first fry of the chips up to 4 hours ahead. Cool on a rack, refrigerate uncovered until chilled, then cover; dry any surface moisture before the second fry. Mix the batter only when you are ready to cook the fish.
  • •Storage: Refrigerate leftovers within 2 hours and use within 2 days. Reheat on a rack over a baking sheet at 400°F (200°C / Gas 6) for 12–18 minutes, until the fish reaches 165°F (74°C); the coating will be less delicate than freshly fried batter.
  • •Swaps: Use sustainably sourced pollock or hake in place of cod or haddock, choosing similarly thick fillets. Cold sparkling water can replace the lager measure for measure, although the batter will have a milder flavour. Nutrition estimates allow for absorbed frying oil, not the entire quantity in the pan.
