Cook's notes
- •Make ahead: The prep time includes a 30-minute chill. For deeper flavor, refrigerate the covered dough for up to 48 hours; if too firm to scoop, let it stand at room temperature for 15–20 minutes. Portioned dough can also be frozen for up to 3 months and baked from frozen, adding 2–3 minutes.
- •Storage: Once completely cool, store the cookies in an airtight container at room temperature for up to 4 days, or freeze for up to 3 months. Keep them slightly underbaked in the center, but not wet, for the best chewy texture.
- •Swaps: Replace the chocolate chips with the same weight of chopped semisweet or dark chocolate. If using salted butter, reduce the added fine salt to 1/2 tsp; weigh the flour where possible, as excess flour makes the cookies cakey rather than chewy.
