Cook's notes
- •Make ahead: Assemble the pie up to 24 hours ahead, cool promptly and refrigerate covered within 2 hours. Bake from chilled in a suitable oven-safe dish, allowing approximately 40–50 minutes; cover loosely with foil if the topping browns too quickly, and check the centre reaches 165°F (74°C).
- •Storage: Refrigerate leftovers in shallow, covered containers within 2 hours and use within 3 days, or freeze for up to 3 months. Thaw overnight in the refrigerator and reheat until the centre reaches 165°F (74°C).
- •Swaps: Use low-sodium lamb stock instead of beef stock if available, or replace the fresh thyme with ½ tsp dried thyme. Keep lamb for a traditional shepherd’s pie; using beef makes it cottage pie.
