Cook's notes

  • •Make ahead: Boil and peel the eggs up to 1 day ahead and refrigerate in a covered container. Wrap and bread them up to 4 hours before frying, keeping them refrigerated until ready to cook.
  • •Storage: Refrigerate leftovers within 2 hours and eat within 2 days. Reheat at 350°F (180°C / Gas 4) until the centre reaches 165°F (74°C); the yolks will become firmer. For anyone advised to avoid undercooked eggs, use pasteurised eggs or boil the filling eggs for 10–12 minutes until firm.
  • •Swaps: Good-quality British-style pork sausages with their skins removed work well instead of loose sausage meat. Fine dried breadcrumbs can replace panko by equal weight for a more traditional, close-textured crust.
