Cook's notes
- •Make ahead: Prepare the Yorkshire pudding batter up to 24 hours ahead, cover and refrigerate. Remove it from the fridge 30 minutes before baking and whisk briefly before pouring into the hot tin.
- •Storage: Refrigerate leftover beef, gravy and puddings in separate covered containers within 2 hours and use within 3 days. Reheat beef gently in gravy until it reaches 165°F (74°C); crisp the puddings in an oven heated to 400°F (200°C / Gas 6) for 5–8 minutes.
- •Swaps: Beef dripping gives the most traditional Yorkshire pudding flavour, but vegetable or sunflower oil also works well. Avoid butter, which can burn at the high baking temperature; nutrition estimates cover the beef, two puddings and gravy per serving, without additional sides.
